I have looked all over the internet to find the perfect healthy carrot cake recipe, in the end I used different measurements and ingredients to create my own recipe which I am sharing with you today. These cupcakes are so light and yummy, you wouldn't even know they're good for you!
Healthy Carrot Cupcakes Makes 15
ingredients:
1.5 cups / 190 grams Whole wheat flour
2 tsp bicarbonate of soda
1 tsp of cinnamon
1/2 tsp nutmeg
1/8 tsp ground cloves
1/4 tsp ground ginger
Pinch of salt
2 large eggs
1/4 cup melted coconut oil
1 tsp vanilla extract
2/3 cup / 230 grams fruit syrup
1/2 cup / 120 grams low fat Greek yoghurt
1/3 cup / 75 ml almond milk
3 medium carrots, grated
handful of raisins (optional)
Recipe : Preheat oven to 180 Degrees / 350 Fahrenheit. Now line a muffin tin with 15 cake cases. Mix together all of the dry ingredients in one bowl (except the carrots and raisins) and in another bowl mix together all the wet ingredients, when done pour the wet ingredients into the dry ingredients bowl and stir until just combined. Now add your 3 grated carrots to the mix and your handful of raisins, mix well. Now evenly add your cake mix to the cupcake cases and bake in the oven for 20 minutes or until golden brown. Once the yummy cakes are out of the oven, leave to cool. You can either have the cakes on their own or add some cream cheese frosting on top of them, either way delicious!
